How To Barbeque Chicken
Follow these easy steps to make great barbeque chicken.

You will need a few items before you begin preparing the grill and the chicken:
Whole Chicken - Pre-cut
Kosher Salt
Pepper (I prefer restaurant quality pepper. It is more coarse than normal table pepper.)
Your favorite BBQ Sauce

Prepare the grill for indirect medium heat:
Charcoal Grills: Light the coals and arrange them around the outside of the grill leaving the center empty.
Gas Grills: Light the outside burners leaving the middle burner unlit.
Maintain the grill at 350F
While the grill is heating up place take the chicken out of the refrigerator and bring to room temperature. This will help the chicken cook evenly.
Lightly season the chicken with the salt and pepper.

On the Grill
Place the chicken on the grill skin side up and close the lid.
Wait until the chicken had about 10 minutes left to cook to baste with the barbeque sauce. Most barbeque sauces contain sugar which will burn quickly so it is important to wait until the chicken is almost done to apply the sauce.
Leg and Thighs will take approximately 40 to 50 minutes.
Breast and Wings will take approximately 30 to 40 minutes.
Check the chicken with an instant thermometer. Make sure the chicken is between 170F and 180F.
Remove from the grill and let rest 5 minutes before serving.
